Let them east peas!

I finally got around to writing the recipe down.  Hope your littles enjoy them just as much as mine do!

 

Pea Fritters

Ingredients

3 cups of frozen peas (convenience is a must!)

2 eggs

2 Tbsp Veggamo Milk Alternative

1 ¼ cups All Purpose flour

2 Tbsp ground flax seed

1 green onion, chopped

1/3 cup of Parmesan cheese

2 Tbsp chopped spinach ( I use the baby salad spinach)

Oil for frying (I like to use Ghee mixed with coconut oil)

 

Boil the peas until cooked, about 4-5 minutes, Drain.

In a food processor, add half the peas, flour, eggs and green onion and blend until just combined.

Add the remaining peas, Parmesan and spinach.

In a large fry pan, heat the oil.  Using a Tbsp, drop the mixture in the hot oil.  Cook until each side is golden and crispy looking, about 2-3 minutes per side.  Transfer the hot fritters to a paper towel lined plate to drain and cool.  Serve warm, yum!
